Thanks to everyone who came out for our Annual Tomato Tasting Festival! A good time was had by all and oodles of tomatoes were tasted! The results are in!

Salsa Contest Winners

Lake Oswego's Winner: Brian’s Fire Roasted Salsa

  • 4 cups Sweet 100 tomatoes
  • 1 medium yellow onion, diced
  • 1 jalapeno, seeded & cut in half
  • 1 clove garlic, minced
  • 1 bunch cilantro
  • 1 lime
  • 1 tblsp olive oil
  • Salt & pepper

Roast tomatoes, onion and jalapeno over open fire on grill or under broiler until blackened, about 10-15 minutes. Blend with cilantro, garlic, juice from lime, and olive oil. Season to taste with salt and pepper.

 

Cedar Hills' Winner: Jennifer Harris’ Garden Salsa (recipe below)

  • Blanch several tomatoes, remove skins and crush
  • Add juice from 1 lime
  • Add salt and cumin to taste
  • Hand-chop several tomatoes,
  • Finely dice 1 white onion, 1 habanero pepper, 1 jalapeno pepper, 1 bunch of cilantro
  • Combine all ingredients in medium sized bowl.
  • Dice 1 jalapeno, 5 tomatillos, and 4 cloves of garlic and sauté over medium heat
  • Add cooked ingredients to other mixture - stir and serve.
